Happy Birthday and What's for Dinner?
I've been trying to think of how I can meld happy birthday greetings with a request for meal ideas. It's a bit of a thematic stretch, but I don't want to overlook this special day for these special people.
I want to wish a happy birthday to three of my good friends, all of whom share a birthday this very day, September 3rd--Barb L in Kansas, Barb R (Craig's wife) and Kathy H whom I've known since 1985. This was also my Granny Ross's birthday. She raised five children on a farm and from her I learned that "every meal should have a green." (Not every meal of ours actually does, but it's a good thing to remember.) From Barb L I learned that Ham Loaf is not gross like it sounds, but delicious. It's meatloaf with half ground beef and half ground ham, and is better than any meatloaf I've ever tasted. (My family agrees. They don't want "plain old meatloaf" anymore.) Kathy H taught me that no matter how many people you've invited to dinner, you can always make room at the table for one more. From Barb R, I learned that it's really okay to eat dessert first, especially if it contains Belgian chocolate.
Now on to more culinary thoughts. I've talked to several moms lately who say they just don't like to grocery shop. I am one of them. It's not that I mind it once I'm there, it's just the whole preparation of a list, hoping that what we're in the mood for has ingredients on sale, or adapting our "moods" to what's on sale, making choices about which night to have what, and so on. My husband, on the other hand, likes to grocery shop. He's out at Wegman's right now, as a matter of fact. It's the first time he's ever gone to that market, and he took the three younger kids. (It's about a 40-minute drive from here.) Whoo-ee. A field trip to Hunt Valley's hottest grocery store.
I do love to try new recipes, especially in the fall and winter. What I'm asking in this post is, What have you fixed lately, or do you plan to fix, or what new thing do you want to try very soon?
Specifically, could you write down one of your favorite meals plus the recipe here for me? Feel free to leave it in my comment box, no matter how long it is. Seriously. Or tell me in the comment box that you've posted it on your blog.
Our family likes all the common meats--beef, chicken, pork--and our favorite cuisine is Mexican. (We're not crazy about turkey, but will eat it about every four months and I think it's been that long.) We love all kinds of vegetables, soups, salads, and breads. I would even like to start a "New Sandwich" night where we try... well, new sandwiches. Make it on our busiest (or maybe laziest?) day of the week.
So, if you'd be so kind as to take one task "off my plate" (sorry for the cooking pun)...post away! And thanks in advance for taking the time. I know it's an effort.

I'll have to think about recipes and write again.
We had a grocery store at one time and I ran it. The thing I liked about it, second to visiting with people, making them old friends, was stocking the groceries.
Now, 30 years later, I still want to stock my pantry like the grocery store!!! But I don't want to cook. I prefer a Subway to my cooking now.
I am 80 and 1/2 now and back on August 10, you asked how many grandchildren we have. I have to stop and count.
Five children, three still have their spouses; 15 grandchldren with six spouses; and 10 great-grand-children.
That's the total. We have been married 61 years and our children are our life now and our joy. Some of them write on my blog and some have blogs of their own.
Life is great.
Most of us are Christians and I am praying constantly for the rest of the family. Still I love every one.
AND YOU WILL TOO, JUST COUNT ON IT!!!

Wow, Betty! That's a huge family! I hope I have that many people to love on when I'm your age. Bet you've done YOUR share of cooking:). That's funny about wanting to stock your pantry like a grocery store. Please take a picture and show me how you do it. Funny how we like to hold on to certain ways of doing things. Whenever I set the table for a big crowd,I love to use cloth napkins folded to stand up in a triangular shape like we set tables at Holiday Inn!
In my effort to eat (and maybe even learn to enjoy!) more healthy foods, this is one that my husband and I can agree on as a favorite. And, let me just make it clear that there aren't very many things that are "good for us" that we agree on! It's also very little prep, which is good on our work schedules.
This is from memory. I originially pulled it off the Internet but I can't find the website now. Also, the portions are for 2, but it's a super easy recipe to double or triple. Just add more lemon!
Lemon Chicken
2 Chicken Breasts (thawed if frozen) (more family members = more chicken breasts)
1 whole lemon (per 2 chicken breasts)
salt&pepper
Nonstick cooking spray
Trim chicken breasts if desired and place on plate or larger pan (so that they are flat). Cut the lemon in half and squeeze the juice from one half over the top of the chicken breasts. Add salt and pepper to taste, and allow chicken to sit. In the meantime, spray a frying pan with nonstick cooking spray and heat on medium heat until hot. Add chicken, squeezing the juice from the other half of lemon into the frying pan. Cook until done (it does have to be watched closely - chicken will get pretty brown and need to be turned frequently).
It's pretty lemony, but we've decided that's good. If you aren't a big lemon fan, use less lemon in the marinade stage! I think it's good served with rice and a green veggie (green beans come to mind). My husband would disagree on that point :)

Here is a easy mexican type meal. We call it salsa chicken!
I take chicken tenders fron Aldis,
put them in a frying pan with olive oil. I put them in frozen and leave them in until they are defrosted and browned some. Next I empty 2 jars of medium salsa (from Aldis, I love that place)into a crock pot. Add chicken and cook on low all day. I serve it over rice. I usually make a salad to go with it. I love crock pot meals because if I do it first thing than I do not have to worry about dinner the rest of the day. I have a really good chicken and stuffing one also.
