Bar-B Cups
This recipe comes courtesy of my friend Priscilla. I don't know if it's exactly the way she told me, but I've been making it like this and have no regrets. It's a quick recipe to make either from scratch or with leftover Sloppy Joe mix.
You'll need a 12-muffin tin. Spray it with Pam. Preheat oven to 350.
2 cans crescent rolls
1 pound hamburger
1 can Manwich
shredded cheddar (a couple handfuls)
Make Sloppy Joes according to directions on Manwich can.
Roll each crescent triangle into a ball.
Press the ball down into the muffin cup and a little up the sides (to hold the meat mixture in better).
Plop a couple of spoonfuls of Sloppy Joe meat mixture on top of that.
Sprinkle some cheddar cheese over that.
Top with another pressed-down ball of crescent roll.
If you want to simplify it eve more, use a pie plate or square baking dish instead of muffin tin. Use one can of rolls as a crust, the second as a top.
Bake 11-13 minutes or until tops are golden brown.
I like to serve this with applesauce or chilled, canned peaches or pears.
Kids like to make these. Just be sure to explain that "Bar-B" means barbeque, not the doll. I made the mistake of NOT explaining to my 4-year old son first. I asked Joel if he wanted to help me make them the other night. He said, "Barbie cups? I'm not touchin' those girl things!"
