Fruity Place "Cards"

A couple of weeks ago I served Caribbean Chicken Salad to the Blum family (new friends from Israel). Our theme went tropical. Lemons, bananas, and limes made colorful place "cards" with each guest's name written with black Sharpie.

Julia laughed when she saw them. "Why do you write on fruit? This is American tradeetion, no?"

"No," I said. "I just saw it in a magazine and thought it was cute."

"It is cute," she said, shaking her head, still unable to get over the novelty.

Two nights ago they came over again. Not wanting to heat up the kitchen on a 99-degree day, we grilled hamburgers on the deck and served storebought potato salad. Since there were 15 of us, including my parents, sister, and brother-in-law, I also opted for paper goods.

When Ya'el walked in (she's the sweetest 18 year old girl I know), she asked if there was any way she could help.

I was about to ask if she'd write names on cups. But I only got as far as handing her the black Sharpie when she asked, "Are we writing on vegetables tonight?"

Caribbean chicken salad sounds really good. Did you post it before? It seems familiar . . . If not, would you mind posting, it sounds so good for summer!

Love the fruit place "cards."

It's from my newest favorite cookbook that I mentioned here before: Eating for Life, by Bill Phillips.

Off the top of my head, here are the ingredients I can remember:

chicken breast (boneless, skinless)
romaine lettuce
mandarin oranges
pineapple tidbits
red onion
grape tomatoes
cucumber
shredded cheddar

Grill the chicken. Drain the canned fruit, Chop the onion. Peel and slice cukes, halve the toms, chop lettuce. Just before plating the salad, mix dressing in. Top with chicken and cheese.

Dressing: honey, Dijon, veg oil
